Home food dehydrators come in two main types:
Horizontal flow dehydrators
These are the dehydrators which look more like small ovens and have racks that can be pulled out or taken out altogether to make space for bulky items.
The horizontal flow dehydrators are usually larger than the vertical flow ones, and they will take up more countertop space. They are generally more expensive too.
Their heating element and fan are usually on the back of the unit, and the hot air is blown forward towards the trays.

Vertical flow dehydrators
These are the dehydrators comprised of trays stacked one on top of the other. Together, these stacked trays help create a closed chamber, which keeps the hot air inside, as it circulates through the different foods on the different trays.

Because dehydrators have fans, they will make some noise. If you are sensitive to sound, then you may want to pick one of the models which are advertised as quieter.
You can also use the dehydrator in a laundry room, garage, or another place where you can close the door, and enjoy a quieter environment at home.
