How To Make Campfire Cinnamon Blueberry Bread Recipe

I am not an outdoorsy kind of girl. I will admit that the only way you can get me to go camping is to promise me a tasty reward afterward.
It is usually some cinnamon blueberry bread that is made around a campfire. The bread itself is already made, but it is the ingredients you add to it that make it delicious.
I will never forget the first time I had campfire cinnamon blueberry bread. I was a Girl Scout Brownie and we made it for breakfast.
I have always been more of a sweet girl for breakfast rather than a bacon and eggs savory girl. I pooped the bread into my mouth and I knew that I would only go camping again if that bread was served.
Long story short, I was a Girl Scout dropout, but I still enjoyed the memories that the campfire cinnamon blueberry bread gave me. I have tried for years and years to duplicate my scout leader’s recipe, but have failed miserably.
I decided that since I could not duplicate hers that I would instead try to make my own. After many, many, many failed attempts, I have finally found a recipe that makes my mouth, taste buds, and stomach smile with joy. Here is what I have come up with.
What you need
- A loaf of cinnamon raisin bread. I love Pepperidge Farm but use whichever you have readily available
- 3 eggs and 3 egg replacers. I try to not use eggs, but for consistency, you need it for the recipe. If you wish, you can make it with all 6 real eggs
- ½ cup 2% milk and ½ cup half and half mixed together. Make it a bit heavier, but you can just stick to all 2% milk, or almond milk if you like. I enjoy doing the vegan thing every once in a while
- 2 tablespoons of maple syrup
- 1 teaspoon of vanilla extract
- ½ cup chopped pecans, toasted. If you have a nut allergy in the family this can be omitted
- 2 cups of fresh blueberries, divided

As you can tell with the fresh blueberries this recipe is best done in the summer. But then again, when else would you actually go camping? Do not answer that question since you are probably like me and never go camping.
To make it authentic, build a campfire. If you are in your backyard, just get out of your grill unless you have a permit for a campfire.
Be cautious and be safe. Make sure someone is always monitoring the fire at all times. Make sure it is an adult too.
Now slice your bread place the slices on foil and fold the foil up along its sides so you can place it around or on top of the campfire.
Now whisk the eggs, egg replacers, milk, maple syrup, and vanilla together. Pour it on top of the bread. You can place all of the pecans on top and one cup of the blueberries.
Once everything is on top, you can hold the edges over the top and make sure it is completely sealed.
If you have a grill grate for your fire, make sure you put it up and then place your foil contraption over it. Now allow it to cook.
After about 40 minutes you can remove your foil from the campfire. It will be very hot so be careful. Do not allow your children to touch it.
The campfire cinnamon blueberry bread is probably smelling so good right now, but you need to allow it to cool for about ten minutes before it is safe to eat.
Now once cool you can pour the remaining cup of blueberries on top of the campfire cinnamon blueberry bread. I also like to pour a bit more maple syrup on top to make it extra flavourful and delicious.
If you do not have a campfire or grill, put the foil on a baking pan place it in your kitchen oven at 350° F and bake for 30 minutes.
Also, allow to cool for about ten minutes before pouring on the blueberries and additional maple syrup.
When I have this for breakfast I also put some butter on top prior to adding the blueberries and maple syrup. It reminds me of diner French toast when I do it that way.
It also reminds me of civilization and that I may not be sleeping on the ground in a tent and about to be attacked by a bear.
Go ahead and try some campfire cinnamon blueberry bread. It will taste like your childhood and almost convince you that camping is fun.
